At Skyrocket Coffee, our mission was to make a cup of coffee that wasn’t bitter, burnt, or boring—just consistently delicious.

 

For years, I searched for consistency in my coffee. Every time I thought I’d finally found it, I was let down shortly after—another delivery of burnt, bitter beans. The flavor would change, the quality would dip, and what once felt like a promising discovery turned into disappointment. There was no true consistency to be found with traditional roasting methods, with the exception of consistently burnt. Maybe you can relate?

 

Eventually, I realized this wasn’t a fluke. It was a problem.

 

So, I set out to fix this problem—at the source.

 

What I discovered in that process changed everything. It led to a roasting method that didn’t just solve the issues of bitterness, burnt notes, and inconsistency—it delivered a flavor experience I hadn’t thought possible: the best coffee I had ever tasted. Smooth, clean, and free of that burnt bitterness we’ve all come to expect!

 

Below, you’ll see what I uncovered while researching traditional roasting equipment—and how one unique, advanced system helped me solve the problems of burnt, bitter, and inconsistent coffee. I chose to step away from convention and embrace a future-forward way of roasting—one that delivers exceptional taste, unmatched consistency, and a lower impact on the planet.

 

I believe coffee should be clean, consistent, and consciously crafted—not bitter, burnt, or boring. And that’s why we roast differently.

 

From the very beginning, I knew Skyrocket Coffee had to be different. I studied the greats, challenged the status quo, and mapped out a new way forward starting with how we roast every single bean.

 

While 99% of the coffee on the market is roasted using traditional gas-powered, enclosed-chamber equipment, I chose a different path with a unique, 100% electric, open-chamber air roasting method using the Air-Motion Roaster (AMR).

 

TRADITIONAL ROASTING: WHERE BITTER FLAVOR BEGINS

 

Have you ever had a cup of coffee that tasted bitter, sour, or left an unpleasant aftertaste in your mouth?

 

Most people assume it’s the bean, the brew, or the brand. But in many cases, it’s the roasting equipment that’s to blame.

 

Traditional drum roasters use direct contact and conduction heat, roasting the bean from the outside in—tumbling them against hot metal surfaces like a clothes dryer. These gas systems are hard to stabilize, often spiking in temperature and scorching the exterior while leaving the inside underdeveloped.

 

But beyond taste alone, one of the biggest issues with traditional roasting is inconsistency. While many factors play a role, the main culprit is the complexity of the roasting equipment itself. Between manual controls, variable airflow, and heat fluctuations, it can be extremely difficult for a roaster to recreate the same roast profile reliably. That means the same beans can taste wildly different from one batch to the next—something we’ve all experienced as a disappointing cup.

 

Worse still, these machines trap smoke, chaff (bean husks), and dust inside the chamber, baking them into the coffee bean. As the bean roasts, it becomes porous and absorbs the flavors of everything around it—including the smoke, combusting husks, and burning dust. That’s where the burnt, bitter, overly acidic flavor comes from—the one many coffee drinkers assume is just part of the experience.

 

And environmentally? Gas roasting contributes to roughly 15% of coffee’s total carbon footprint, often releasing more than 1.2 pounds of CO₂ per roast

 

ENTER THE AIR ROAST: A CLEANER, SMOOTHER FUTURE

 

Unlike traditional drum roasters as described above, the AMR suspends beans in a column of hot air—a vortex that gently roasts each one evenly from all directions. The beans rise, fan out, and fall peripherally, all while being cleaned of husks and impurities in real time. This cleaning happens through a combination of air and an extraction hood: the air gently pushes chaff, smoke, and dust away from the beans, while the hood actively pulls those impurities out of the open roasting chamber—before they ever have a chance to impact flavor.

 

The result?

  • Clean, smooth flavor—without the burnt or bitter aftertaste.
  • Even internal and external roasting, preserving more of the bean’s natural character.
  • Remarkable consistency in every batch—no scorched shells, no guesswork.
  • A system that minimizes emissions by around 90% compared to traditional roasting methods. (The CO₂ produced comes from the beans themselves, making this method dramatically cleaner overall.)

 

The AMR is also uniquely engineered to combine convection, conduction, and radiant heat. While the beans are suspended and roasted in air, they also contact gently warmed metal surfaces as they descend, giving the final cup both clarity and body. Unlike drum roasters—where the bean is pressed against intensely heated metal—the AMR heats the air first, and that air warms the chamber. It’s a more controlled, gentler process with better flavor integrity

 

The AMR was created by South African inventor, roaster, and entrepreneur Julian Platt, whose background in baking, food service, and specialty coffee helped shape this groundbreaking design. First launched in 2020, AMRs are now being used across six continents by roasters who value precision, innovation, and cleaner roasting.
